Snowy Weekend Blueberry Tart

With the cold weather upon us and SNOW for those in the Midwest...its a perfect time to bake!  This Blueberry Tart is a go-to item that I make frequently when I have overnight guests or family get-togethers.  It is super easy but looks, smells and tastes amazing!  Recipe courtesy of Schwan's. 

Blueberry Tart

1/2 c butter, softened                
1 c sugar                                     
1/2 t vanilla                                 
2 eggs                                          
1 c plus 1 t flour
1 t baking powder
1/2 t salt
1 1/2 c to 2 c frozen whole blueberries
1 t lemon juice

Preheat oven to 350 degrees.  Spray a 9" round baking pan with cooking oil and dust lightly with flour.  Beat the butter, sugar and vanilla until light and fluffy.  Add the eggs and beat well.  Reduce the speed to low and add 1 c. flour, baking powder and salt, beating until smooth.  Pour batter into the pan.  Stir together blueberries, one teaspoon flour and lemon juice.  Spoon mixture over batter (don't stir in as shown below).  Bake 40-50 minutes or until toothpick comes out clean.  Remove and cool.  If you want to get fancy, dust cake with powdered sugar before serving.
