Egg Benedict Breakfast Pizza

The.Best.Breakfast.Pizza.Ever.... seriously!


What you'll need:

1 tube of pizza crust
4 eggs, scramble
Canadian Bacon, deli ham or cubed ham
Salt and pepper
1 cup Cheddar Cheese
1 cup Mozzarella Cheese

Hollandaise Sauce:

4 egg yolks,reserve egg whites for pizza
1 stick of butter
2 tbsp lemon juice
1/4 tsp paprika
1/4 - 1/2 tsp black pepper

To prepare the sauce:

Melt one stick of butter in microwave. In a separate bowl, add 4 egg yolks. Set the unused egg whites aside. We'll scramble the whites later. Add lemon juice, paprika and pepper to yolks and whisk until smooth. Slowly whisk in melted butter. Whisk together until well combined. Set aside.

Pizza:

Preheat oven for whatever the crust calls for.

Unroll the pizza crust. Press the crust to your desired thickness on a greased baking pan. Spread the sauce on the pizza crust. Scramble 4 eggs along with the 4 egg whites set aside from the Hollandaise sauce. Add scrambled eggs and ham to pizza, and sprinkle on salt and pepper. Top the pizza with cheese. I also suggest adding some veggies - onions, peppers, mushrooms, etc.

Bake for 15 minutes or until cheese is melted.

Easy Cheesy Quesadilla

This recipe is NOT going to blow your mind. It's so simple and easy you could prepare it while wearing a blindfold. I don't recommend that though.

Why post something so simple? As a mom, I am always looking for cheap and easy meals and snacks. This post may be an "Oh yeah, I forgot about those." moment for some readers (really, I'm happy to help make your life a tad easier). This recipe meets my cheap and easy requirements. Make them as a snack or as main entree item.

I made the kid-friendly version for this post:

What you need:

2 flour tortillas
1/2 cup of shredded cheese
1/2 Tbsp olive oil (optional)
Frying pan

Preparations:

Turn stovetop to medium high.

Add olive oil to frying pan (oil is optional because it cooks fine without, but the oil gives it more of a fried taste and better crunch).

Put 1st tortilla into frying pan, immediately add cheese, top with 2nd tortilla.



Wait a couple of minutes and flip (or until cheese is partly melted so it doesn't come flying out during the flipping process).

Wait another couple of minutes and it's done.

Cut into 4 pieces with pizza cutter and top with sour cream and salsa.



Seriously... it's like 5 minutes worth of prep and cook time and kids love them!

Outside In Pizza



I love this. Why? Because you can get as creative as you want. 

I chose to make pizza but you could really get crazy and do something like chicken pot pie or maybe an apple cinnamon cream cheese strudel. The options are numerous.

I made a peanut butter and jelly strudel many months ago using the same techniques (listed below). The kids gobbled it and I even enjoyed it!

What I used:

Pizza dough (I used pre-made dough)
Pizza/spaghetti sauce
Canadian Bacon
Mushroom
Onion
2 tablespoons butter
Garlic Powder

How I did it:

Preheat oven to 350
Greased pan and pressed out the dough to the thickness my family prefers.
Spread sauce down the center of the dough.
Add Canadian Bacon, mushroom, onion, cheese (add as much or as little as you like).

Cut diagonal slits down each side of the dough, about a 1 ½ inch apart and 1 inch from the filling.
Crisscross each slit over filling. Press opposing slits into one another. 

Brush melted butter over slits and sprinkle with garlic powder.
Bake for 45 minutes. 


Serve and enjoy!

P.S. I do know this is called a Calzone... I just prefer Outside In Pizza.
